Replace z.any() with z.custom<T>() for WebAuthn types

Use proper TypeScript types from @simplewebauthn/types instead of
z.any() for WebAuthn-related schemas:
- PublicKeyCredentialCreationOptionsJSON
- PublicKeyCredentialRequestOptionsJSON
- RegistrationResponseJSON
- AuthenticationResponseJSON
